If you’re trying to welcome the new year with a new svelte figure but just can’t seem to put away the tacos, fret no more, “Leonor’s Mexican Vegetarian Restaurant” is a great alternative para mantener la figura sin tener que dejar de disfrutar la comida que te gusta. If vegetarian eateries are hard to find, a Mexican vegetarian joint is twice as hard but never impossible. La Comida

The menu is as simple as it is unexpected. You’ll find your “typical” tacos, quesadillas, a couple of soups, some salads, but the surprise comes with a very un-Mexican entrée: pizza. Yes, they have organic and 100% vegetarian and vegan friendly pizza. 

Cabe mencionar que regardless of the items on the menu, at “Leonor’s” all of the “meat” and cheeses used are soy based.  Por si fuera poco, they don’t use ANY salt while cooking their food, así que it’s up to you el ponerle sal al gusto. 

There’s no better way to begin a feast than with a nice and fresh salad.  The “Green Salad” makes for a great starter, it comes with shredded lettuce and spinach, chopped tomatoes and cucumbers, shredded beets and chopped red onions, all drenched in a dressing made with soy oil and apple cider vinegar. 

A popular combo at “Leonor’s” is “Mike’s Special”; it comes with a chicken quesadilla and a side of fresh guacamole. Sounds like a little bit of food but the quesadilla is on the jumbo side, y por si fuera poco they are more than generous with the guacamole, you get a huge serving of that chunky and fresh deliciousness.

Another scrumptious and popular item in their menu are the enchiladas, they have beef, chicken and broccoli enchiladas. Definitely broccoli is the way to go… now, antes de que pongas cara de fuchi just by reading broccoli enchiladas, you’ll be surprised by the taste and crispness of these unique enchiladas, you get whole wheat Chapati (some sort of wheat tortilla) stuffed with broccoli and topped with cheese. 

Now if you’re not feeling like eating Mexican food and where hypnotized by the word “pizza”, no te quedes con las ganas, their dough is made with stone ground whole wheat, stirred up with soy oil, molasses, and honey. 

You can create your pizza by adding one or as many of the ingredients in their menu… however, if you wanna be impressed and taste something so un-vegetarian but 100% vegan and healthy that’ll blow your mind, go for the “Forever-Young Special Pizza”.

This novelty pizza comes with fresh mushrooms, sausage, sliced tomatoes, bell peppers, sliced avocado, meatballs, black olives, red onions, garlic y jalapeño & cilantro al gusto. A bite of this will completely change your mind on vegetarian food and on all things healthy. La neta es que la pizza will never be the same after this.

Lo mejor de todo es que los precios son bastante accesibles, el servicio es buenísimo, y la comida como para chuparse los dedos y volverse vegetariano.
